City
At lighter roasts, coffees tends to be more bright, with a lighter body and more sweetness. Certain regions are noticeable sour at this point, while others are floral and delicate. It is not often our coffee is taken this light, but on occasion it captures a coffee perfectly!
City+
A slightly darker roast than our City, the flavors brought out by this can be compared to the flavors brought on by the process of doing a fruit reduction. The coffee is held for a bit after the first crack, but dropped before the second crack starts. This results in a regions floral and fruit flavors being brought out (like the apple taste in Guatemala). Coffees like Sumatra, which taste of tobacco at darker roasts, taste sweet and floral at this roast level.
Full City
Taken just into second crack, coffee at this level starts to lose some of its fruit/floral subtlety in favor of caramel and chocolate flavors or tones. A noticeable tobacco hint can come out of some regions at this level as well, and many coffees hit an excellent balance at this point. While this may be a safe gamble to take many regions of coffee, the most noteworthy parts of certain regions are lost at this roast level.
French
A dark roast that leaves behind most any floral or fruit like flavors in any region. At this point, the coffee tastes oily (in a good way) and it's sweetness is that of sucrose or a bittersweet chocolate. This is what evening cups that accompany cigars are designed for, as a tobacco flavor from regions like Sumatra is noticeable here. Some nuttiness may linger for some coffees at this stage.
Double French:
Near burnt, these black beans are almost all carbon. Not one of our coffees is offered in this way normally. Some coffee companies use a quick method of roasting that takes their coffee to this stage as a way of masking the errors in the beans being used. Even with great beans, the subtleties and flavors from a particular region are not noticeable. We call this carbon coffee, as it is not much else. It is offered here for you to try as some people do prefer this flavor, so go ahead and give it a taste if you feel up to it!
